You may have noticed that we’re Popsicle aficionados around here! And when it comes to making our own we like to play a little fast and loose and we don’t follow a specific recipe but instead we mix and match, here’s how:
In a blender puree the (ripe) fruit of your choice such as peaches, watermelon or local berries. Add in half a banana or some tropical fruit such as pineapple, mango or papaya and a little bit of water or lemonade, blend well and then pour into a Popsicle tray and let freeze.
Optional: add chopped mint leaves, whole blueberries, or even bits of fresh coconut to make them extra yummy.
Our kids love getting in on the Popsicle action with us and making fun concoctions to freeze and enjoy. These Popsicles are also excellent for keeping your kids hydrated during hot summer days.
If you don’t have Popsicle molds don’t let that slow you down, you can always use an ice cube tray and small wooden Popsicle sticks. And then you also have ice cubes on hand to cool down your summer lemonade and make the kids feel fancy.
